4 large tomatoes (2 pounds), peeled, seeded, and coarsely chopped
1 large cucumber, peeled, seeded, and coarsely chopped.
1 cup chopped red onion
3 cloves garlic
1/4 cup red wine vinegar
1 tablespoon canola oil
2 tablespoon mild cayenne pepper sauce
3/4 teaspoon salt
Place tomatoes, pepper, cucumber, onion, garlic, vinegar, oil, hot sauce, and salt in blender or food processor. Cover and process until smooth. Transfer to a serving bowl, cover, and chill at least 2 hours before serving to allow flavors to blend. Makes 6 servings.
