Xylitol, discovered in 1891, is a naturally-occurring form of the five-carbon sugar xylose found in many fruits and vegetables and produced by the body during normal metabolism. Commercial xylitol has gained widespread acceptance as a sweetening agent in food because of its role in reducing tooth decay and inhibiting transmission of the strep mutans bacteria from caregivers to children.
