Heart-Healthy Recipes — 2 cups diced zucchini
1 (14½ oz) can Italian-style stewed tomatoes, undrained and coarsely chopped
½ cup ditalini (small tubular-shaped pasta), uncooked
1 (16 oz) can red kidney beans, drained
1/8 teaspoon pepper
1 (10 oz) package frozen peas and carrots, thawed
2 cloves garlic, minced
½ cup grated Parmesan cheese
2 (16 oz) cans one-third-less salt style chicken broth
Combine first 8 ingredients in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 10 minutes or until pasta is done, stirring occasionally. Stir in cheese; ladle into bowls. Serves: 9
