Heart-Healthy Recipes — Meatball Appetizer

American Heart Association recipe, reprinted with permission

1 lb. ground round (93% lean, 7% fat)
¼ cup skim milk
¼ cup egg substitute or 2 egg whites
¼ cup onion, finely chopped
½ cup soft breadcrumbs
½ tsp. Angostura brand Worcestershire sauce

Sauce
½ cup ketchup
⅓ cup sugar
½ cup onion, chopped
1/8 tsp. pepper
⅓ cup vinegar
1 Tbsp. Angostura reduced-sodium Worcestershire sauce

Combine ground round, egg, breadcrumbs, milk, onion and Worcestershire sauce and mix well. Shape into 1-inch balls. In skillet over medium heat, brown meatballs and drain. Place in 2½ quart baking dish. Combine sauce ingredients and pour over meatballs. Bake uncovered at 350°F. for 50 to 60 minutes or until done. Yield: 4 dozen.
